Gastronomy

As natural as exquisite

At the heart
of this land beats strongly with the hospitality of its people, its customs and the flavour of this traditional cuisine.

Few places in the Canary Islands preserve the authenticity that La Oliva shows in its gastronomy, strong inland and much lighter on the coast. Natural, evocative flavours of recipes prepared with top quality products. Traditional recipes that in some cases have evolved towards a more avant-garde and universal cuisine thanks to unique products. It is worth mentioning the town of Corralejo, which has managed to harmoniously combine the tourist area with the Old Town, where the good taste of local gastronomy and the positive influence of international cuisine stand out.

A great seafaring tradition that allows us to taste a wide variety of fresh fish and seafood from the area.

GOFIO (a kind of corn flour) Our faithful companion

At lunch or dinner. It can be eaten in different ways, dissolved in milk, scalded with fish stock, kneaded with water and salt or with the addition of oil, sugar and fresh cheese for those with a sweet tooth. In today's cuisine, this product has been used in desserts such as mousse or gofio ice cream. Another speciality of Canarian gastronomy that should not be missing from the menu of those who want to discover the uniqueness of our dishes are the "papas arrugadas" (wrinkled potatoes), served with red or green “mojo” (sauce).

EL COTILLO

The landscape is made up of imposing cliffs and the singularity of its cove-shaped beaches. This sea-flavoured village is flanked on the north by the “Faro del Tostón” (Tostón Lighthouse) and on the south by the “Castillo del Tostón” (Tostón Castle). The picturesque streets lead you to the small quay, the origin of the history of its people. Restaurants overlooking the sea allow you to taste the best wild fish on the island.

LAJARES

From a farming tradition  to a surfing reference point in the Canary Islands, due to its location between Corralejo, Majanicho and Cotillo. The mixture of cultures has given rise to a series of establishments with Central-European-influenced cuisine. It is still the reference point for popular cuisine based on goat meat and kid.

VILLAVERDE

A village with a tradition of agriculture and livestock farming, today it is one of the villages with the best offer for a good meal in its restaurants.

Influence cuisine, flavours of the world

La confluence of other cultures has allowed the gastronomic offer in our municipality to be like embarking on a journey through the flavours of the world, without leaving Corralejo. The most accentuated presence is that of the Italian community, which has brought us the best of Azzurri cuisine.

Fresh pasta and pizza, homemade ice cream and the art of making good coffee. Other cuisines such as Asian, German, Swiss, British, Brazilian, Portuguese or Argentinian can be tasted in a modern and cosmopolitan Corralejo.

Market of Traditions

This house was owned by the colonels when, in 1840, Sebastiana Cabrera donated it to her son Pedro Manrique de Lara (son of the colonel) so that he could live independently. Today, the Mercado de las Tradiciones is located here, a place where self-employed entrepreneurs sell a wide range of products related to the primary sector and Fuerteventura's handicrafts.
